Ingredients:


Mix of lentils - 1 cup

Jalapeños - 1

or green chilly - 4

Salt to taste

Black pepper powder - 1/2 tsp

Water - 1.5 cups






How to Make:




  • Soak mixed lentils in 2 cups water. 
  • Wash and chop Jalapeños or chilly, and keep it aside.


  • In a pan, add olive oil and lightly sauté chopped Jalapeños or chilly.
  • Add salt, black pepper powder and lightly give a quick stir and remove from the stove top.


  • Wash drain and add the soaked lentil mix and give it a quick pulse in the mixer grinder for one minute.
  • the mixture has to be coarse to touch.
  • Make small patties of any shape.
  • Traditionally this is just made by placing a small quantity between the palm and the fingers and pressing it tight.
  • Steam it on a steaming plate for 12 mins.
  • Serve on a plate with spinach chutney.

How to Make: 


  • Wash mushrooms and keep aside.
  • Wash and chop potatoes into half.
  • Boil potatoes with enough water for 15 mins or until soft.

  • In a pan, take 2 tsp oil, potatoes, onion, spinach and sauté.

How to Make:



  • Cook potatoes until soft. Mash and keep it aside.
  • Wash and chop Jalapeños or chilly, green and red bell peppers and keep it aside.


  • In a pan, add olive oil and sauté chopped Jalapeños or chilly, green and red bell peppers.
  • Add salt, black pepper powder and lightly give a quick stir.
  • Add half of the mashed boiled potatoes and stir it again.
  • Cook for 3 more minutes.
  • Add soy sauce, lemon juice, chickpea flour and mix.
  • Make patties by taking small balls of the above mix and pressing between the palm.
  • Sprinkle quinoa on both sides.
  • Shallow fry on both sides with little olive oil until brown.

  • Boiled or canned Chickpea - 1 cup
  • Onion - 1
  • Green Chilly - 1
  • Masala (any) - 2 tsp
  • Red chilly powder - 1tsp
  • Black Pepper Powder - 1/2 tsp
  • Salt to taste
  • Olive oil - 4 tsp



How to Make: 



  • Wash firm tomatoes, cut in half, scoop the inside and keep aside.
  • Use canned chickpea or boil soaked chickpea with enough water for 15 mins or until soft.
  • Chop onion, and green chilly.
  • In a pan, take 4 tsp oil, onion, green chilly and sauté.
  • Add boiled chickpea, chickpea masala or any masala of your choice.
  • Add a tsp of chilly powder and salt to taste.
  • Mix well and cook for 5 mins.
  • Stuff each tomato half with the above chickpea mixture.
  • Line a toaster oven tray.
  • Toast the tomatoes for 5 mins.

  • Spinach - 12
  • Onion - 1
  • Chickpea flour - 1 cup

  • Salt to taste

  • Keep 8 leaves aside.

  • Add salt, black pepper powder, chilly powder, caraway seeds, and lightly give a quick  stir.
  • To half of the above dry mix (mix 1), add 1 cup of water and mix well to form a thick batter.
  • For the other half (mix 2) add diced onion, 1/2 cup water and mix well.
  • For air frying, you do not need the oil for frying. 
  • Use the spinach leave, dip in mix 1 and air fry in air fryer or deep fry in oil.
  • For mix 2, scoop out using a small spoon the mix 2 and air fry until golden brown,

  • Toast the zucchini boats for 5 mins. 
  • Drizzle with avocado cream and vegan cheese.

Whole Wheat Poori - Home made Poori is everyone's favorite food that can be enjoyed with freshly brewed tea.

Ingredients:



  • Whole Wheat Flour - 1 cup
  • Water 1/2 cup 
  • Salt to taste
  • Oil for frying - 1 cup
  • Caraway seeds - a pinch (optional)



How to Make:




  • Add 3/4 cup of whole wheat flour, salt in a bowl and mix with warm water little at a time to form the dough
  • Optional to add caraway seeds while mixing the dough
  • Keep it aside for 10 mins
  • Using a rolling pin, roll out a small quantity of the prepared dough into round shape. 
  • Sprinkle a pinch of whole wheat flour while rolling.
  • Heat the oil and slide the hand-rolled dough. Flip slides to fry slightly brown.
  • Serve hot with a cup of freshly brewed tea.
